UBAVIDA is a Supra-autonomic Operational Group that aims to produce a new range of wines with lower alcohol content -but with organoleptic properties similar to those of their alcoholic counterparts- through the application of innovation and sustainability from the grape to the dealcoholization process.
To this end, UBAVIDA will evaluate practices that contribute to addressing climate change, since rising temperatures lead to stress in the vineyard and grape ripening with a lag in sugar content with respect to aromatic precursors and polyphenolic composition. Research will be conducted on conventional and organic winemaking processes for grapes with lower sugar content. On the other hand, UBAVIDA will also evaluate the use of new dealcoholization techniques and the addition of oenological products that contribute to harmonize dealcoholized wines. In addition, phenolic, aromatic and bioactive compounds and physicochemical parameters will be monitored from the grape to the dealcoholized wine.
The results of UBAVIDA will have a major impact on the sector. The project will help modernize agriculture, address climate change, and improve the competitiveness of the wine sector by producing an innovative and sustainable product.
